Specialty Food is prepared from the highest quality ingredients resulting in a marketable product with a comparatively high market price. The category of Specialty Food is as vast as jams, jellies, sauces, nuts, exotic cheeses, and meats including smoked turkey, sausages and salmon. The trend is that they are marketed by mail order, by means of gift shops, gourmet food stores and deli departments of chain stores.

Specialty Foods are not something new. The existing food items are presented in a new combination and then loaded in the supermarkets. The end consumer feels that since the product is newly launched in the market, it needs to be tried.

The main reason for an increasing demand for Specialty Food is that people deem them homemade. They are made from natural ingredients and give great satisfaction to the consumer. It is claimed that these foods are for people with sophisticated tastes. This, and the intermingling of communities, has created a demand for fashionable products.

However, one cannot deny that the basis of Specialty Foods is extensive research. Quality cannot be compromised at any cost and this is the main concern of the producers and distributors of Specialty Foods. Skeptics and critic maintain that the company has little knowledge related to food ingredients, processing technology, packaging, and type of marketing strategy; and above all, quality control or sanitation.

The product should be such that it satisfies the consumers and is backed up by professional marketing skills. Small issues like bacteria, molds and risk from yeasts should be taken care of. A food scientist with a solid background in organic chemistry and microbiology may be hired for solving these problems. At times, the product fails in the initial stages. However, this can be countered by trailing the flaws in the entire manufacturing and marketing process and thereby rectifying it.
